Yūmochi

Our oldest signature product since 1868, Yūmochi is a very soft type of mochi called "ryūhi" made by mixing sugar into the mochi flour dough (unlike regular mochi which is cooked plain).
First we mix yellow and green yuzu citrus paste into the mochi flour to make the dough. The dough is then steamed and cut into bite-size pieces. Finally we sprinkle them with traditional Japanese "wasanbon" sugar.
